Chili and Maple Glazed Pork Tenderloin

We had this for dinner last night. It was really moist and yummy. It had a little bit of heat to it. For those families with young children, you might want to half the sambal oelek. The flavor was really good, and we all really liked it.

Chili and Maple Glazed Pork Tenderloin

The Ingredients

serves 4 (can easily be doubled or tripled!)

 

2 pounds pork tenderloin, quartered

2 tablespoons all-natural maple syrup

1 tablespoon prepared chili pepper sauce (sambal oelek)

1 teaspoon five-spice powder

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

2 green onions, thinly sliced

 

Homemade "cheater" sambal oelek:

1 teaspoon crushed red pepper flakes

1 teaspoon chopped garlic cloves (approximately 2 cloves)

1 teaspoon distilled white vinegar

1/2 teaspoon brown sugar

 

Use a 4-quart slow cooker. Put the pork into the insert, and add the maple syrup, chili sauce, five-spice powder, salt, and pepper. Stir well to disperse the spices. Toss in the green onions. Cover, and cook on low for 7 to 8 hours, or until the pork has reached desired tenderness.

 

The Verdict

 

This moist, sweet pork has a tiny bit of lingering heat from the chili pepper sauce. Pork tenderloin has a tendency to dry out, but cooking in the slow cooker really traps in valuable steam. If you find that your cooker releases a lot of steam while cooking, you can wrap the pork in a piece of aluminum foil to keep it nice and juicy.

A Spicing We Go

Thursday night as we were finishing dinner our friend Bill came to cut my counter for me. It only took about 10 minutes and it was done.

 

After dinner I ran to Lowes and picked up a quart of white semi gloss to use. I put on the first coat. It dried pretty quickly, but I was ready for bed when I was done.

 

I have had a lot of my friends ask me if I had enough spices to fill it. I just laughed. I took a picture of my current spice cupboard. Just a little full.

 

I put the second coat of paint on before I left foe work tonight. Came home and was so excited to load it. I got all of the bottom shelf and some from the middle. I really thought this would hold more than it does. It still workes! These are the ones that I use most ofte

Raspberry Chipotle Chicken

We had this for dinner tonight. We really liked it. My husband thought it was a bit on the sweet side, but the rest of us were fine. The chipotle pepper and adobo gave it a wonderful smoky flavor without adding a lot of heat. My mouth had a nice warmth, but was by no means hot. If you are a little wary, use half a chili to try it out.

Ingredients
  • 1 Tbsp vegetable oil
  • ½ med yellow onion
  • 2 cloves garlic
  • 8 oz. tomato sauce
  • 1 cup raspberry jam
  • ¼ cup cider vinegar
  • 1 pepper + sauce chipotle peppers in adobo
  • 4 lbs (8 pcs) chicken thighs
Instructions

  1. Finely dice the onion and garlic. Cook both in a sauce pan with vegetable oil over medium heat until softened (3-5 minutes). Meanwhile, roughly chop one chipotle pepper and reserve 1 Tbsp of adobo sauce from the can.
  2. Add the tomato sauce, raspberry jam, cider vinegar, chopped chipotle pepper and adobo sauce to the cooked onions and garlic. Stir everything well and bring up to a simmer. Continue to simmer for about 45 minutes, stirring occasionally. Allow the sauce to cool after simmering (it will thicken upon cooling).
  3. Remove the skin from the chicken and trim any excess fat. The skin should pull away from the meat easily although you may need a small sharp knife to separate it in some places. Preheat the oven to 375 degrees.
  4. Prepare a baking sheet with aluminum foil and non-stick spray. Place the chicken thighs on the tray and slather with BBQ sauce (pour a small amount of sauce into a bowl before brushing onto chicken so that the whole batch will not get contaminated with raw chicken).
  5. Place the BBQ chicken in the oven and bake for 45 minutes. Fifteen and thirty minutes into the cooking time, take the chicken out and slather with more sauce.

Note: Chipotle peppers in adobo sauce can be found in with the Mexican food in your grocery store. Chipotle peppers in adobo sauce usually come in super small cans (4-5 oz) but even still, I usually only use one pepper at a time and have almost a whole can left over. I *always* freeze the rest. Divide the peppers and adobe sauce up into small portions and pop them in the freezer.

Irish Skillet Dinner

Had this for dinner last night. My husband didn’t like it, even though he ate it. The boys, the girlfriend and I really liked it. It had great flavor. My husband and I both have Irish on our lines. Little bit of homage to it.

Ingredients

· 1 cup Beef Broth

· ¼ cups Apple Juice

· 2 Tablespoons White Vinegar

· 2 Tablespoons Yellow Mustard

· 1 Tablespoon Worcestershire Sauce

· 1 teaspoon Salt

· 1 teaspoon Coarse Ground Black Pepper

· 1 pound Lean Ground Beef

· ½ cups Fresh Diced Onion

· 2 Tablespoons Vegetable Oil

· 1 pound Ore Ida Hash Brown Potatoes O'Brian

· 4 cups Shredded Green Cabbage

· 4 slices Cooked, Crumbled Bacon


Preparation

In a small mixing bowl, combine the beef broth, apple juice, white vinegar, yellow mustard, Worcestershire sauce, salt, and pepper. Whisk to blend and set aside.


In a large iron skillet, brown the ground beef with the fresh diced onion. Drain any excess grease. Add the vegetable oil and hash browns to the beef and onions. Cook over medium heat for about 10 minutes or until hash browns are lightly browned, stirring frequently to prevent sticking. Add the liquid mixture and the shredded cabbage and bacon and cook another 5–10 minutes over medium heat until most of the liquid is absorbed. Serve immediately while hot with some Irish soda bread.

Wedding Gift

I have a wedding one the 27th of this month. It is for two friends at work that are getting married. They both have had establised households. The don't need the typical newlywed stuff.


As I set pondering what to get them yesterday I thought about something to put on their wall. I thought I might do their last name in filet crochet. I think they would both really like it. Not only that, but I have the supplies.


I want to look online and see if I can find an alphabet to plot out for the pattern. I haven't done filet since before my kids were done.

Cream Cheese Chicken Taqitos

Had these for dinner last night. They were sooo good. I didn’t even dip them in anything. That says a lot. The recipe says that it makes 12, but I got 20. I might not have been quite so generous on the filling, but I wanted to be able to roll them. I thought they had plenty of filling. I used a generous, but not heaping serving size tablespoon. Next time I think I will double this so that I can put some of them in the freezer.

Cream Cheese Chicken Taquitos

Ingredients
  • 2 boneless skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • salt + pepper
  • 8 ounces cream cheese
  • ⅓ cup water
  • ½ cup shredded colby or Mexican blend cheese
  • 12 6 inch corn or flour tortillas
  • optional: cilantro, salsa, sour cream, or other toppings as desired
Instructions
  1. Mix chili powder, garlic powder, cumin, salt and pepper to taste, cream cheese, and water in a medium mixing bowl. (I put this in the microwave for 1 minute to make it easier to mix) Pour half of the mixture into your crockpot, place chicken in crockpot and pour remaining mixture over the chicken.
  2. Cover and cook on low 8 hours or high for 4 hours.
  3. Minutes before serving, remove chicken from crock pot, shred with two forks, and return to slow cooker. Give it a stir. Cook about 15 minutes longer.
  4. Preheat oven to 400. Here is a great trick to keep your corn tortilla from falling apart. Place 1 corn tortilla on a skillet, put about ⅛ cup cheese on the corn tortilla. Warm the tortilla until the cheese melts, remove tortilla from pan. Melting the cheese on the corn tortilla will keep it from falling apart in the next step.
  5. Place about ¼ cup of the chicken mixture onto the middle of each corn tortilla that has the melted cheese on it or a flour tortilla.
  6. Top with 1-2 tablespoons shredded cheese. Roll tightly and place in a single layer on a greased baking sheet. If using corn tortilla brushing some olive oil over them will help with browning and crisping.
  7. Bake 10 minutes, until tortillas are slightly browned and shredded cheese is melted. Serve with desired toppings and sauces.

Knitting Needle Organizer

Today, although Valentines, is my normal shopping day. Told DH there was no way I was going to the grocery store. It is also Presidents Day Weekend and the beginning of Parade of homes. We did do a few small errands together and then he left me to my own devices.
Mentioned to D H that I couldn't find my table top and asked him if he had any idea what happened to it. He said no, and a light bulb went off. I know at one time he put a board under the mattress for his back. I mentioned that and he agreed that might be what happened to it. Sure enough when we got home there it was. It was even painted like I remembered. I am very happy that I don't have to buy a new one.
Went back to Lowes to get the hardware for my desk. I haven't been able to find what I bought yet. A really nice young man helped me find the right size hinge for the table legs so the will collapse. He asked me if I had any braces to keep them up when I had the table set up. Hadn't even thought if it. He found some collapsible braces for me. Even though I had to buy another package of hinges, it was worth it for that hint.
I took the paint samples from the craft room to JoAnn's Fabric. I wanted to be able to match the colors for my knitting needle organizer. That is the other thing that isn't working. I have at least 2 sets of most of the knitting needle sizes. I usually have 3-5 projects going at the same time. I made a roll up organizer for them about 10 years ago, but I have outgrown it. I hate having to paw through them to find what I want.
I saw a cool idea from Etsy, but the owner was sold out. It was very similar to what I had already done, but on a larger scale for over the door. This one has a top row for crochet hooks. I probably won't put that one in. I don't crochet much anymore. I will do one for double points, cables, short and long needles.
I'm making the back of it yellow and the pockets will be two different patterns of orange. I decided to bring in a third color after all
I also went to Michael's and picked up the second thread rack.

Pantry Organizer

Five years ago when I started on this craft room I wanted a gift wrapping station for birthday and shower gifts. I had intended to use part of my pegboard for it, but it didn't work out like I wanted. Last week when I was looking for other things I happened on this pin. She used an over the door pantry organizer from Walmart. I can afford this at $17.88 and easy to do.
I ordered one tonight. My Walmart didn't carry them. Did ship to store. I can't wait for it to come in and get it organized. Now I will have a place for bows, tape, tags etc.

Slow-Cooker Chinese Pork with Garlic Noodles


We had this for dinner last night.  My boys, 1 girlfriend and I really liked it.  My husband said it was okay.  It was really easy.  The pork had really good flavor, and then the sauce flavored the noodles.  This made tons.  For those of you that don’t have kids left at home, or are single, I recommend halving this recipe.  My husband and boys are not fond of cilantro, so I didn’t include that, and I forgot the peanuts, but we will do this again for sure.

Slow-Cooker Chinese Pork with Garlic Noodles

Total Time 4 hr 20 min
Servings 9
Ingredients
pork tenderloins (1 lb each), trimmed
1/4 cup reduced-sodium soy sauce
tablespoon hoisin sauce
tablespoon tomato sauce
teaspoon sugar
teaspoon grated gingerroot
cloves garlic, finely chopped
tablespoons seasoned rice vinegar
teaspoon dark sesame oil
packages (8 oz each) Chinese noodles
cup julienne carrots
¾ cup diagonally sliced green onions
1/4 cup fresh cilantro leaves
1/3 cup chopped unsalted dry-roasted peanuts
1/3 cup chopped fresh cilantro
lime wedges
Directions
  • 1 Spray 5-quart slow cooker with cooking spray. Place pork in slow cooker. In small bowl, stir together 1 tablespoon of the soy sauce, the hoisin sauce, tomato sauce, sugar, gingerroot and garlic. Pour over pork.
  • 2 Cover; cook on Low heat setting 3 hours 30 minutes. Remove pork from slow cooker to large bowl; let stand 10 minutes. Pour cooking liquid through strainer into separate bowl; cover to keep warm. Shred pork, using 2 forks; cover to keep warm.
  • 3 Return cooking liquid to slow cooker; stir in remaining 3 tablespoons soy sauce, the vinegar and sesame oil. Increase heat setting to High. Cover; cook 10 minutes.
  • 4 Meanwhile, cook noodles as directed on package. Turn slow cooker off. Add carrots, onions, cilantro leaves, shredded pork and cooked noodles; toss to coat. Sprinkle individual servings with peanuts and chopped cilantro. Serve with lime wedges.

Note: I didn’t want to use my big crockpot, so I put the meat in my small one.  Cooked the noodles in my big metal pot and then transferred the meat/sauce to the noodle pot.

Button Jars

I posted a request for baby food jars last night on FB. Got a reply from a friend this morning saying she had some. She has been saving them even though her husband couldn't understand why she was. She said she knew one day someone would want them or she would find a use for them. She said she couldn't wait to tell him she was right.

Went at lunchtime to Lowes to look at paint. I'm thinking of adding a third accent color. I had found the name of the yellow on the paint can, but I didn't write down the name of the green. I stood there for about 20 minutes trying to find it. All of a sudden I remembered that I was just starting to blog when I was doing this. Sure enough there was a blog post with the paint colors in it. I really wanted to do a happy dance in the store.

As I have been moving around in this room I have decided I really don't like the dressers in the room. They don't work for me. I don't like getting in them. I would rather just see the yarn.

Looked around on my favorite place, Pintrest, and came up with an idea similar to this.
I am just going to use it for my yarn instead of shoes. That way I will be able to see it at a glance. I am going to divide it into cubbies like this. I bough white duct tape to find it together and to coordinate in the room. It will also make it stronger.

Came home with the baby food jars and put them straight into a sink of hot water to get labels off. The have redesigned the labels. They are more of a clear sticker now. I had to use a knife and a lot of elbow grease to peel them off. I tried two different things and couldn't get the glue to come off. Guess I will have to buy some Goo Gone.

Counter and Pegboard Baskets

I had asked one of the guys at church Sunday what the best tool to cut my kitchen counter with for my spice rack. He is a general contractor, so he would know. He said he would come over tonight and look at it. I thought I could do it with a jigsaw, or a circular saw. He said not a jigsaw. The blade wiggles to much. He didn't think it would cut a straight enough line.
Our knitting group was throwing a surprise party for our leader Carole. I had to leave before they got there. I asked DS1 to show them where I wanted it cut and pay attention to what they said.

As I was cleaning the other night I had a great idea. I had 3 pieces of wood left over from my spice rack that I didn't have a use for. I realized I could use them on my pegboard as shelves.

After the party I made a quick trip to Walmart to buy the pegs for the shelves and a new thread rack. Found a thread rack at Michaels and was able to use a 40% off coupon so it was only $8.99. Saw a pin on Pintrest that Target hat small metal buckets in their $1 section. Went to check them out. Bought three. One for my rulers and seam ripper, one for pencils and one for my exactly knife and scissor sharpener. Things I just want to grab that are long.

Came home and talked to DS1. I asked him if the contractor had come. He said yes. Asked him what he said and he said he didn't remember. I couldn't believe it. It had only been two hours. He suggested I call. I was really not very happy with him. He is 19, but I swear some days he has no brain cells.

Put up my shelves, buckets and thread rack. The shelves fit perfectly onto the long pegs. I will need to paint them. As I put them together i decided that I ought to use baby food jars to sort my buttons. They would be clear and small. I posted a request on Facebook. There are a lot of new moms at church. Shouldn't take long to gather them.

Filled the buckets and put them on the bottom row of holes. They look really cute. I need to find some small baskets for some of the flatter things like pins, tape measures, bobbins and sewing machine feet.

Put up the new tread rack. I didn't realize that I had so much. There were only a couple of empty spots when done. I guess I need two! I will need to mount more pegboard. I have some leftover, and a mounting strip. I just need to cut it to the right size.

Taco Spaghetti

We had this for dinner last night.  I was different than the tradtional, but good.  There was not a morsel leftover.  Even my youngest that doesn’t like spaghetti ate it.  Although he did mention it would have been better without the pasta. LOL

Taco Spaghetti Skillet

Serving Size 6 servings (1 cup each)

Ingredients 1 pound extra lean ground beef (95% lean)
1 pkg (1.5 oz each) mild taco seasoning mix
 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
2-1/2 cups water
8 ounces dry Pot-Sized™ Spaghetti, uncooked
6 tablespoons reduced fat sour cream
Serving Size 6 servings (1 cup each)

Directions Cook beef in large skillet over medium-high heat 7 minutes or until crumbled and no longer pink, stirring occasionally.

Add taco seasoning, undrained tomatoes and water; stir to combine. Add spaghetti; bring to a boil. Cover, reduce heat and cook 10 minutes or until spaghetti is tender, stirring occasionally.

Top each serving with 1 tablespoon sour cream.


Cook's Tips Pot-Sized Spaghetti is 5 inches long --- the perfect size to fit in a pan without breaking. If Pot-Sized Spaghetti is not available, break regular spaghetti in half for this recipe.  Walmart has their own brand which is 16oz for $1.

Organizing Craft Room

I have a new friend Bonniejean, who is into crafts like I am. She showed me her craft area and it was ultra organized. Mine has been really bad for the last 6 months. Not putting things away, etc. I finally decided after church today I was going to get started.

Five years ago when I made my craft room, I painted the walls, put up my desk, painted the dressers for my yarn, put up pegboard and then just kind of stopped.
I haven't decorated the walls, or done much at all with the pegboard. I tend to take stuff in there and then dump it. Bad habit. Tonight I decided that I really want to actually finish this room so that I will enjoy it more. Money circumstances have changed some, so I need to do it on a shoe string. Most of the elements are in place. I just need to keep going.

I got my desk almost totally cleared off. What is left are little piles I want to put in baskets, jars etc on my pegboard. I need some organizing ideas. When I originally put my pegboard up cut dowels to put in the holes for my thread spools. That isn't working like I wanted at all. I'm going to see about buying a premodern rack.
 
When I originally planned my craft room I built desk top on the majority of two of the walls. I also saved and painted a piece to use as a table extension, with collapsible legs. It will give me some more room when sewing and laying things out. Not enough room to keep it prmanantly though. As I was cleaning up I realized I couldn't find it. Searched high and low to no avail. DS1 and DS2 said they didn't know. I guess I wll have to go buy a new piece. Darn!

Spice Rack

I have hated my spice cupboard for several years. It is just too small. I just don't have anywhere else to put them though. They are on the three shelves to the right of my stove. It is getting to the point I have to half empty it to find what I want. About a month before Christmas I saw a brilliant idea on Pintrest. It was for a slick rack that you could put between you fridge and counter. I wanted it!

I tried really hard to get one of my guys to make it for Christmas. My DH told me flat out no. He is a type 4 personality. If he can't do it perfect, he doesn't want to do it. I think the boys just thought it would be too hard. When none of them would agree to make it, I told them to just get me a gift card for Lowes or Home Depot. I decided I would do it myself. It is basically a bookshelf with a few dowels thrown in.

My DS2 gave me a $50 Lowes card for Christmas. Up until now it has been too cold outside or I haven't had time. Since Cracker Barrel wants me working Valentines weekend, I switched my regular with it. I didn't have to go shopping either. Free Saturday. I don't get many of those.

Here I am figuring out the shelves. I had made a plan with figures, but had to revise. I was using 1 x 4's. They were not 1". More like 3/4". Threw my math off and I had to refigure.
Once I got the places for the shelves marked and the dowel placement marked I clamped them together and used the drill. I pre drilled all the holes for the nails to make it easier in me. I clamped them together to make sure the sides matched.
BTW, just as a side note, I've done enough wood projects that I really want a pair if saw horses ans a circular saw. Crazy huh?

This is after I added the backing and the handle. I was really glad that I had waited on the backing until the frame was together. With my math changing the back would have been the wrong size and I would have been ticked.
Here is the completed project. With dowels in place and the caster wheels so it will pull out. No all I have to do is find time to paint it.

Quilt AsYou Go

When I called my friend Kathy last night to give her the info on the the long arm she invited me over to see her latest quilt. She is much faster at making quilts than I am.

I was telling her my delima about a quilt for DS1. she said I should do a quilt as you go. I came home and looked it up on line. You do each block separately. You quilt the top piece, whatever it is to the batting, attach the blocks together and then sew them to the back. Add your binding, and you are done. Very doable! 
 
I think that is what I an going to do. Looked on Pintrest for ideas. DS1 said he wanted basically the same thing. The green and burgundy. I think The blocks are in good shape, they just came apart. I may take it completely apart and use them in the new one. I'd like to find some coordinating prints to help update it at the same time.

The more I think about it, this may be my new technique. Since you are quilting each individual block you can be as detailed as you want.

DS1 Quilt Request

DS1 and his girlfriend were here at the house tonight. I was good timing because I needed her moms contact information. She has a long arm in her home, and quilts for people. A friend of mine had asked for the information.
As I was getting the info from her Ds1 mentioned he wanted a quilt. He says he stopped using his because it was falling apart. He just has it folded in his room. I told him I would think about it. The top I can afford, it is the quilting that kills.
I really would like to replace it for him. This is the second time he has mentioned it. I will have to think on this some.

About 16 years ago there was a local business in town that made sleeping bags, shirts and skirts I think. They used a machine to cut out. They didn't mind if you dumpster dived and took their remnants. I only went once, but I got two garbage bags worth. That year I made quillows for my three kids. My DD's was red. There was a solid red, and a white with red flowers. DS1 got now that was hunter green and burgundy. Green was his favorite color at the time. My youngest got a light chambray blue. His I had to go and buy coordinating fabric for. It was a light blue with red, yellow and orange lines bending like pipes all over it.

Last time I saw my daughters a couple of years ago it was still in one piece. Both of the boys loved theirs well. They have literally fallen apart. I think it was the cheap thread I used.

Mexican Chicken Skillet Dinner

This was really good.  I skipped the jalapeno and the cilantro, but we really liked it.
 
Mexican Chicken Skillet Dinner

Ingredients
  • 2 boneless, skinless chicken breast, trimmed and sliced in half lengthwise
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 2 tsp vegetable oil, divided
  • 2 garlic cloves, pressed
  • 1 large red bell pepper, diced
  • 2 cups fresh or frozen corn
  • ½ cup water
  • 1 lime, juiced
  • ½ cup grated Mexican cheese blend
  • 1 jalapeño, sliced thin
  • ¼ cup chopped cilantro
Instructions
  1. In a small bowl combine chili powder, paprika, cumin, salt, and pepper. Sprinkle evenly over both sides of the chicken breasts.
  2. In a large oven safe skillet heat 1 tsp of oil over medium heat.
  3. Add chicken breast and sauté until both sides are browned and cooked through, about 6 minutes. Transfer to plate and cover.
  4. Add another teaspoon of oil to the pan along with the garlic and bell pepper. Sauté until garlic is fragrant then add the corn. Cook until corn is heated.
  5. Add the chicken back to the pan.
  6. Add water and pour lime juice over the chicken. Cook for 3 minutes. Sprinkle with cheese and place under broiler to melt cheese.
  7. Remove from oven. Sprinkle with jalapeños and cilantro.
  8. Serve with wedge of lime.

Crockpot Sweet and Sour Pork

I'm not a big fan of pineapple when it is warmed for some reason.  I had reservations about this recipe for that reason.  We all love sweet and sour, and it was a dump recipe so I decided to give it a try.  I have to admit that it was amazing.  We really liked it.  Not only that it made quite a bit when added with the rice.  Very inxexpsive recipe to feed the family.

Crockpot Sweet and Sour Pork

*2-3 pound lean pork roast
**1 cup granulated sugar (seems like a lot, but it mellows out)
½ cup white vinegar
4 tablespoons soy sauce
4 tablespoons ketchup
20 ounce can crushed pineapple (drained)

Brown the pork roast on all sides and put it in your slow cooker. Mix everything else and bring it to a boil, then pour it over the meat.

Cook on low for 4-6 hours or until very tender (spoon the sauce over the meat every once in a while).


NOTES: 
*Walmart sells a small vacuum packed 2 pound pork roast that is perfect for this recipe. The package says "pork loin rib eye pork roast".
**Even though as noted the sugar mellows out, it was still a bit sweet for us.  Especially since you have sweet from the pineapple juice also.  I think next time I make it I am going to cut the sugar in half.
